With the same recipe, I modified and make many variation of bolu gulung meranti.
3 egg yolks
75 grams sugar
1 tbsp emulsifier (TBM or ovalet)
10 grams coconut milk powder
½ tsp baking powder
40 grams flour
10 grams corn flour
½ tsp vanilla (optional)
¼ tsp salt
½ tsp pandan paste
1 tbsp milk
65 grams melted butter
½ cup strawberry jam
Preheat oven 180 C with lower heat. Prepare 30 x 20 x 5 cm baking pan with baking paper sheet (you can use baking pan with similar size).
Combine flour, corn flour, baking powder, vanilla, salt and coconut milk powder, keep aside.
Beat together sugar, egg yolks, eggs and emulsifier until thick and form firm peaks.

Beat in the flour mixture, milk and melted butter. Mix in the pandan paste.
Pour the batter onto prepared baking pan.
Place the baking pan inside oven and bake for 20 – 25 minutes.
In meanwhile, prepare a baking paper sheet covered with icing sugar and prepare the filling ready including the spoon or pastry knife that you will use to spread the filling. Make sure everything is ready before you take out the cake from the oven.
When the cake is ready, take it out from the oven and scrap the sides of cake with knife to help it easily comes out from pan. Immediately turn it out on the prepared icing sugar paper. Roll it quickly with the baking paper helps and release. Spread the filling and roll the cake again. Wrap it tightly and leave it until it cools. Slice and serve the cake.
